I have had this book on kindle for a long time but finally bought the hardcopy, which will be easier to use. I especially like the tuscan white bean recipe, but there are many that look promising and which will be easier to access now. An attractive book with nice pictures.

Love, love, love!
This will be my go-to cookbook this winter. Every recipe I’ve tried has been fabulous, and I want to try them all. My favorites are the Chilled Watermelon Soup, Carmelized Onion Soup, Thai Coconut Broth, and Cuban Black Bean Soup. The author does a really nice job of presenting both familiar and unique soups without intimidation. Simple yet interesting. Love the variety of many different cuisines, with no weird ingredients I cannot find in my grocery store or will only use once. Love the emphasis on fresh vegetables, herbs, and spices. Love the variety of chilled, pureed, hearty, vegetarian, and meaty options. In response to other reviewers, making your own broth is worth the effort… just double the recipe and freeze. Or just buy it at the store, for heaven’s sake. Don’t let that keep you from making these soups!

Spiritual Experience in Soup Making
I could not wait to try these recipes. I started with the Magic Mineral Broth and no joke . . . I had a spiritual experience. I am “moved” by these recipes and could literally feel my body feeling so nourished and supported. These recipes take you to a different level of soup making. These soups mean business. These are the kind of recipes that separate soup from SOUP. Do they take more time than other recipes? Yes. And only you can determine if that works for you. For me, the power of nourishment I felt from these soups was and is totally worth the time. And they are artistically beautiful! I’ve also made the Thai Coconut Broth, the Power Green Soup, Nana’s Chicken Soup With Zucchini Noodles, and Salmon Coconut Chowder. Make the base broths as recommended and these soups are AMAZING. Only improvement to be made is the font and color of font on certain pages makes it difficult to read – actually kind of a pain and distracting on certain pages (sad face). I would actually deduct a star for that. But these recipes and the gorgeous photography deserve five stars so five stars it is!

Best Soup cookbook I’ve ever found
I had been searching for a good vegetarian soup cookbook, and while this book does contain recipes with meat, there are so many truly DELICIOUS vegetarian soups in this book, that it more than fit the bill. The vegetable stock, aka “Magic Mineral Broth” is fantastic. I hadn’t been bothering to make my own stock because all the recipes I found looked as bland and unappealing as the ones you bought in the store, which I would never have sipped on their own. Thankfully, this book provided a really GOOD vegetable broth recipe, and very nutritious. The Thai Coconut Broth is amazing. The Kale soup with coconut and lime was surprisingly good. The Kitchari was a welcome change from the usual Dal soups, but the most incredible one so far was the Moroccan Carrot soup with Chermoula. Don’t leave out the Chermoula – it takes the soup from delicious to sublime! I’m going to work my way through this book. Next up is Ruby Red Beet Soup….
